roasted jalapeno pineapple salsa

we are religious about celebrating taco tuesday in our house – but tbh, i could eat tacos every day! one of our favorite toppings for tacos (or any mexican food) is roasted jalapeno pineapple salsa.

ingredients:

2 jalapenos

extra virgin olive oil

1 pineapple, diced

1/2c red onion diced (about 1/2 a red onion)

cilantro

1 lime, juiced

1 orange, juiced

salt+ pepper to taste

directions:

preheat oven to 450*. drizzle a little extra virgin olive oil on the jalapenos and place them on a baking sheet, whole. roast for 7-9 minutes, or until the jalapenos start to turn brown and the skin splits. fully allow to cool, then seed + dice. i like things extra spicy, so i seeded one and left one with the seeds in! mix the diced pineapple, diced red onion, diced jalapeno with the orange and lime juice, plus cilantro, salt and pepper to taste.

we used this on shrimp tacos (our new favorite!) but this would also be good with tortilla chips, topped on jerk chicken, or as part of a taco salad bowl! let me know if you end up trying this recipe!
